Lunch bento


I made black bean burgers based off of this recipe, but I used pine nuts instead of walnuts, and changed a few other things.
There is also wild rice cover with raw snow peas, sauerkraut with a umeboshi (pickled plum), and roasted onions and sweet potato.

Another dinner bento

Clockwise from top left: homemade sauerkraut, brown sweet rice with gomashio. Tsubu (mostly just azuki beans). Oven roasted sweet potatoes. A salad I made that was inspired by this (unfortunately, it's been too long since I made it and I don't remember what was in it, but it was good)!

Dinner bento

This is a large bento I made for my mom when she came to visit. I used Japenese white rice sprinkled with gomashio and toasted nori. On the top left is steamed edamame and miso glazed tempeh sticks (I made a glaze with miso, soy sauce, ginger, and I don't really remember what else. I marinated the tempeh in the glaze, then baked them in the oven). In the green container is kimchi. The blue contain is kinpira gobo. A tea egg (not the lazy kind this time). And a stir-fry with lotus root, snow peas, enoki mushrooms, and tree ear fungus.

My second bento

Rice with green tea furikake. Stir-fried lotus root, daikon, carrots, and enoki mushrooms. Roasted zucchini and shiitake caps. And a Lazy Tea Egg. A cabbage leaf is used as a divider.

My first bento!


Fried rice: kale, sweet potatoes, onions, and mushrooms stir-fried with rice.

Burdock root (gobo): sliced burdock root sauteed in sesame oil until tender. During last 5 minutes of cooking add: soy sauce, mirin, rice vinegar, sugar, red pepper flakes, and toasted sesame seed. Cook until liquid has evaporated and the roots are glazed.

Hard boiled quail eggs, dried figs, pear slices.
